It kind of all happened by accident one day when I was in a pinch to come up with a salad to take along to a potluck event. By some miracle, I combined a bunch of these ingredients and came up with a prize salad that everyone loved! Packed with bright flavours, varied textures and colourful ingredients in a zesty citrus dressing, this salad is irresistibly refreshing. The salad compliments fish or roasted grilled meats nicely. Orzo is a small pasta shaped like a melon seed and I find it works great in salads as it holds its shape extremely well. Wild rice has a crunchy yet chewy texture with a nutty wholesome flavour that adds a nice texture to the salad.
You know an in and out trip. To serve: Toss again and sprinkle with almonds. It is so colorful and mouthwatering. Went to JA tonite and had this salad-it was so good, i was jumping up in the air hugging myself.

Takes 10 Minutes Minutes , serves 4. This combo of wild rice, pasta and legumes is a most satisfying one. Good looking too! And with a mild curry spice dressing , the sweetness of currants and crunch of toasted almonds , a much-appreciated contribution to a weekend of fine eating and fun. The salad is make-ahead , doubly suitable for hosts to have on hand, or for appreciative guests to pack in the cooler as their share in the weekend bounty. Serving Suggestions: Excellent with salmon — grilled or roasted, hot or cold — grilled chicken, tofu and any variety of steaks, pork or lamb chops.
Reduce heat to medium-low, and simmer until the rice is tender but not mus. Made dice first version and loved it. I love this version of this recipe and I also love the original at J. Toss rice with 2 tablespoons oil.
Do you use actual black currents or zante currants. It is easy to wilv, travels well! What a delicious salad…sounds wonderful dear. They are not related to black or red currants even if packaging says so.
