That seems to help. And I know reecipe that giddy ebullience that comes from a recipe working out well. I find the recipe produces a heavy moist bread with a good crust. But what distinguishes this recipe, its true genius.

You might want to think about some of the other dinner roll recipes on the site. One thing though-we actually weigh our water in grams rather than giving the liter-equivalent. Even with weighing the ingredients the dough was so sticky it was impossible to shape so I just plopped it onto a baking sheet with parchment paper. Thanks, Kim Farrell.

No easy way-it took lots of testing in our books. The recipe is simple to follow but I find that it has way too many steps. Quickly but carefully pour about 1 cup hot water into the broiler tray and immediately shut the oven door to trap the steam. The bread was usually delicious, mxster a few failures along the way. Allow to cool completely.

I've mainly posted this recipe so that I don't have to hook out the book every time. The dough is stored in the fridge for up to 2 weeks, taking out a bit each day as you need it, forming it and baking it. A forum I belong to love this bread, which is what inspired me to get the book. Most of them cook it in a Remoska, which is a gadget that I find invaluable. Remoska's are from Checkoslavakia, and I believe they've just come to the States. In the UK they're available from Strongly recommend getting the book, if you like this bread.


Is this what it is supposed to do. If necessary mix up artissn dough about 3 to 4 minutes hands on. It should feel just a little warmer than body temperature. Gail Rueckl.

The one time I did have a good-looking loaf I had added loads more flour but then the texture and flavor were wrong. All materials used with permission.

  1. Like so many rustic bread recipes, it relies on just pantry staples of all-purpose flour, yeast, salt, and water. But what distinguishes this recipe, its true genius, is the technique. More than that, though, you can stash it in the fridge for later. But in terms of actual effort? 😪

  2. Rate Recipe. The book has a great argisan of recipes. Or, you can use parchment paper under the loaf! Also I have just purchased an Emile Henry loaf baker.
